Sweet Potato Hummus

Taking a trip to Music City, USA? You might want to make dinner reservations at one of Nashville’s most interesting restaurants before you hit the Grand Ole Opry. ZOLA specializes in Southern European and New South cuisine, and chef/owner Debra Paquette has for the last two years been voted by the Nashville Scene’s Readers Poll for Best Chef and Best Menu. Sweet Potato Hummus is one of her most popular dishes, a perfect twist of the deep south and the Mediterranean.

About the chef: Debra Paquette, chef/owner of ZOLA in Nashville, Tennessee is in the current issue (October) of Gourmet magazine. ZOLA was named as one of the top sixty restaurants in the United States. Gourmet's annual Restaurant Issue had this to say, "ZOLA is vibrant, swathed in exotic fabrics and finishes, and serves lusty, exuberant, mostly Mediterranean food." She received the 1998 and 1999 "Restaurateur of the Year" awards from the Tennessee Chefs Association. She has already been voted "Nashville ’s Best Chef" many times in past Nashville Scene Readers Polls. She is also featured in two new cookbooks, "Cooking From The Heart" and "One Fish, Two Fish, Red Fish, Blue Fish".

This is a 2-part recipe:
Sweet Potato Hummus
Candied Pepper

Sweet Potato Hummus Ingredients
1 lb. sweet Potatoes - $ .78
1 large Lemon (juiced) - $ .35
1 tsp. Cumin seeds - $ .08
1 tsp. Salt - $ .01
1/4 tsp. Cayenne pepper - $ .02
1/8 tsp. Black pepper - $ .01
1 Tbsp. Tahini - $ .19
1 Tbsp. Olive oil - $ .15
3 tsp. brown sugar - $ .07
Zest of 1 Orange - $ .40

Bake or microwave sweet potatoes until fully cooked, allow the potatoes cool, then remove and discard the skins. Toast cumin seeds on low heat, then crush by hand before adding to the food processor. Seeds can be crushed by using a mortar and pestle or by smashing between a saucepan and cutting board. Place the remaining ingredients into the processor and blend until smooth and creamy. Tahini is a thick paste made of ground sesame seeds that can be purchased already prepared from local supermarkets. When hummus is finished mixing, you may want to add more salt or sugar depending on the sweetness of the potatoes.

Optional Presentation Ingredients
1 tsp. crumbled Feta cheese - $ .13
1 tsp. toasted pistachios - $ .11

Serve hummus with toasted pita or bagel chips. Scoop hummus onto decorative plate, then place candied chilis in the center of the hummus. Sprinkle with feta and toasted pistachios.
