You need energy, and this dish will give you just the right amount to study and to attend class with fresh eyes and ears after a long day at the job or tending the home fires. Make a big quantity (the recipe easily doubles). A perfect way to use leftover roast from the weekend family dinner.
Back-To-Night School Hash
Ingredients: 1 1/2 tablespoons olive oil 1 small yellow onion, chopped 1 red bell pepper, chopped (or mix red and yellow for a colorful addition) 1 pound cooked roast beef, cut into 1/2" pieces (about 2 heaping cups) 1/2 cup Dunkin' Donuts Original Blend coffee, brewed 1 teaspoon Worcestershire sauce 1 teaspoon Dijon-style mustard 3 tablespoons beef broth (low sodium if available) Salt and pepper to taste Garnish with salsa, as desired
Directions: In a skillet (iron is great), sauté the onions and bell peppers in olive oil over medium heat until soft. Add the chopped beef and stir, then add the coffee and simmer until the moisture is absorbed. Add the Worcestershire sauce, mustard, and beef broth and simmer for a few minutes but do not allow to boil. Taste, add salt and pepper as necessary. Keep the mixture warm while you make 4 eggs, sunnyside up. To serve, spoon out a half-cup of the beef hash, top with an egg, and add a dollop of salsa, as desired. Serve with warm sour dough bread or corn tortillas (great for scooping!) and a freshly-brewed cup of Dunkin’ Donuts coffee.
