This is a 2-part recipe:
Roasted Wild Goose
Apricot Stuffing

Apricot Stuffing
1 Onion ($ .30)
1 stalk Celery ($ .12)
1 Tbsp. Vegetable oil ($ .02)
1 Tbsp. Thyme ($ .07)
1 Tbsp. Parsley ($ .02)
1 Tbsp. Sage ($ .04)
1 Tbsp. Garlic ($ .07)
1 Egg ($ .17)
1 cup dried Apricots ($ .45)
2-½ cups crumbled stale bread ($ .02)
1-½ cups chicken stock ($ .75)

In a skillet, sauté chopped onions and chopped celery with 2 Tbsp. olive oil. Cook until the vegetables are translucent. In a large bowl, mix sautéed vegetables, chopped garlic, chopped apricots, thyme, parsley, sage, and bread. In a small bowl, whisk together the egg and the chicken stock, then pour over the stuffing and mix. Pour mixture into a greased casserole dish, and bake at 375 degrees. Cook for 45 minutes or until the center is hot.
