Coffee Sauce/Marinade

This is a zesty, lively marinade that is perfect for meat or turkey. In fact, serving this over leftover turkey makes it turn from "not again" to "wow!" Keeps well in the refrigerator for up to three days, so marinade away!

Ingredients:
6 cups (48+ounces) Dunkin' Donuts Original Blend coffee, freshly brewed
1/2 oz salt
1/2 oz sugar
3-4 pieces fresh jalapeño pepper diced
3 1/2 ounces freshly squeezed lemon juice zest of two lemons
2 sprigs finely chopped fresh rosemary
2 sprigs finely chopped fresh thyme
2 ounces (about a level tablespoon) cracked black pepper, crushed
1/2 ounce tomato paste
7 3/4 ounces Worcestershire sauce
2 ounce extra virgin olive oil
3 to 4 cloves of finely chopped garlic
1 ounce flour (heaping teaspoon)
2 ounces tequilla

Directions:
Brew the coffee and allow to come to room temperature In a large bowl, whisk together the following: coffee, salt, sugar, jalapeño, lemon juice, lemon zest, thyme, rosemary, black pepper, tomato paste, and Worcestershire sauce. Taste and adjust the seasonings as desired.

Bring the marinade to a boil in a large saucepan, then reduce to a bare simmer.

In a separate large pot, sauté garlic in olive oil until the garlic turns opaque. Add flour slowly, stirring to dissolve then reduce flame to low and cook one more minute.

Add tequila to create a flame. Then, slowly add coffee marinade and simmer for an additional 30 to 45 minutes.

Strain sauce through a fine sieve. Ladle marinade sauce over leftover turkey and serve. Leftover marinade can be used to marinate steaks, beef, chicken, pork or turkey, should there still be leftovers!

YIELD: 1 quart, about
